Our love of mexican food here in the west often leaves us gorged on chips, filled up with rice and weighted down from too much cheese. This super bowl provides lean protein, whole grain rice, and steamed greens to round out a healthy dose of mexican food minus the gluttony.
We used organic lean ground turkey, brown basmati rice seasoned with a quarter cup red enchilada sauce, swiss chard, edamame beans and topped off with parmesan cheese, a dollop of non-fat greek yogurt and chopped cilantro. This is sure to fill you up, and keep you satisfied after a warm healthy bowl of goodness.
Tip* Make your own taco seasoning for the ground turkey and control the amount of salt you use on your own:
- 1 tablespoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper
