We’re delighted to share our most popular omega 3 packed salad that will have your guests raving! Every time we make this hearty and healthy display of color, someone asks for the recipe so we decided it was worthy of sharing with all of you. We love this salad so much that we’re certain it will satisfy even those skeptical of eating a salad as their main entree.
The smoked salmon is packed with healthy omega 3 fatty acids that help to reduce inflammation and eczema. Go ahead and taste the rainbow… yeah – Skittles are not included. Shopping list below.
- Corn- (raw sliced right off the cobb)
- Orange Bell Pepers
- Currents or Golden Raisins
- Parmesan or Asiago
- Smoked Salmon
- Israeli Couscous or Barley
- *Trader Joe’s Cilantro Salad Dressing
If you want to make your dressing from scratch:
- 1/2 shallot, roughly chopped
- 1/2 cup aioli
- 1/2 cup buttermilk
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
Create a color band by grouping the ingredients in rows over a bed of arugula. When the salad is served you can mix the ingredients together, or prepare a serving with one long scoop across all the rows.
